Jake's Special Chicken Parmesan Recipe

Hey fellow Jakes, I thought why not honor our shared name by showing off a special recipe I've perfected over the years: Jake's Special Chicken Parmesan!

Start by grabbing some boneless chicken breasts, then marinate in garlic, olive oil, lemon juice, and a little paprika. Let it sit for at least 1 hour.

Preheat your oven to 200°C (390° F).

Dip each chicken breast in flour, then beaten eggs, and then coat heavily in breadcrumbs. Bake them for 20 minutes.

While the chicken's baking, let's work on that sauce. Sauté finely chopped onion and garlic until translucent, add canned tomatoes, sugar, a dash of vinegar, salt, and pepper. Let it simmer until it thickens.

After 20 minutes, take the chicken out, pour the sauce over it, and lay slices of mozzarella on top. Put it back in the oven for another 10 minutes or until the cheese is bubbling and golden.

Garnish with fresh basil leaves. Served best with pasta or crusty bread and a good bottle of wine! Bon appétit, my brethren Jakes.

New to cooking here. When you say finely chopped, how tiny should the onion and garlic pieces be? Like really really tiny or just small?

Ah, a Jake of culinary arts as well, I see. This pairs really well with a nice full-bodied Chianti, doesn't it? Brings out the tanginess of the tomatoes beautifully. But have you perhaps considered adding a pinch of oregano to the sauce for that extra kick?

Chef Jake here! Your recipe sounds really well thought out, but let me add a little suggestion. Ever tried panko breadcrumbs? They offer a crunchier texture and golden appearance which is absolute top-notch on chicken parmesan!
