Interesting but slightly misleading - honey can deteriorate, more in the sense of it can crystallize or the flavor can change over decades. Perfectly edible doesn't always mean perfectly delicious. The phenolic compounds in honey that contribute to its stability can also degrade over time, altering flavor and antioxidant properties.
