Here's what you'll need: - 2 cups chopped peeled ginger - 3/4 cup sugar (more if you like it sweet) - 7 1/2 cups water - Sparkling water for serving - 1/2 cup fresh lemon juice

And here's the simple process: 1. Make the ginger syrup: Boil ginger with sugar and 3 cups of water; simmer it for 45 min. Cool for 20 min, then strain. 2. Mix it up: For each serving, mix 1/4 cup of ginger syrup with 1 1/2 cups of sparkling water and 1 tbsp lemon juice. 3. Serve it cold!

Hey folks, long-time brewer here. Love the simplicity, but if you want to go the extra mile, consider adding some fermentation into the process with a ginger bug. It's a natural way to introduce carbonation and probiotics. And it's not as difficult as it sounds - just some ginger, sugar, and water left to ferment for a few days, then use it in place of some of the water in the syrup. Adds depth to the flavor too.
