Been years trying to perfect my Mint Chip ice cream and safe to say, It's finally there!! Here's the recipe for you guys. Enjoy 😋
Ingredients: - 2 cups heavy cream - 1 cup whole milk - 3/4 cup granulated sugar - 1 cup fresh mint leaves - A pinch of salt - 1 cup miniature semisweet chocolate chips
Steps:
Infuse the Mint: In a medium saucepan, combine the cream, milk, sugar, and mint leaves. Heat the mixture over medium heat, stirring, until the sugar is dissolved and the mixture is hot. Remove from heat, cover, and let the mixture steep for 1 hour.
After an hour, strain the mixture through a fine-mesh strainer, pressing on the mint leaves to extract as much flavor as possible. Discard the leaves and return the mixture to the saucepan.
Heat the mixture over medium heat until it's hot again. Meanwhile, fill a large bowl with ice and water and set aside.
Chill the Ice Cream Base: Once the mixture is hot, place the bowl in the ice bath and stir it occasionally until it's cooled to room temperature.
Cover the bowl and refrigerate the ice cream base for at least 3 hours or overnight.
Churn the Ice Cream: Pour the cold ice cream base into the ice cream maker and churn it according to the manufacturer's instructions.
A few minutes before the ice cream is done churning, slowly add the chocolate chips to the ice cream maker so they can be evenly distributed throughout the ice cream.
Once the ice cream is churned and thick, transfer it to a lidded container and freeze it until firm, at least 2 hours.

Ice cream aficionado here and I must say, this is one of the more pleasing Mint Chip recipes I've come across. Quite like the idea of infusing the mint directly into the mixture for that richer flavor. Maybe I would switch to dark chocolate chips for a more striking contrast. Great job nevertheless!
