It's been months and I still can't get over the fact that Garden Fresh Gourmet discontinued Jack's Special Salsa. So I've been experimenting to recreate it. After countless tries, I think I nailed it. Here it is for anyone else suffering:
Ingredients: - 4 ripe tomatoes, finely diced - 1/2 red onion, minced - 1 jalapeño, seeded and minced (keep the seeds if you like it spicy) - 1/3 cup chopped cilantro - Juice of 1 lime - 1 tsp garlic powder - 1 tsp cumin - Salt to taste
Mix everything in a bowl, let it sit for a bit so the flavors meld together, and enjoy. It's not 100% there, but it's close enough to soothe the pain. Cheers to the salsa we miss. 🌶️

It's not traditional in fresh salsas, but I found that it captures the smoky undertone of Jack's impeccably. Dude, you may have just saved my life with this recipe. I was so bummed when they discontinued Jack's. Gonna try this out tonight and see if it fills the void. Did you use any specific type of tomatoes? I find that Roma tomatoes tend to be less watery and might give a thicker consistency.
