Best gluten-free pancake mix

I've been on a quest for the best gluten-free pancake mix for MONTHS now. I've tried Bob's Red Mill, Pamela's, and a few random local brands.

Bob's Red Mill has great texture but sometimes lacks flavor. Pamela’s is okay, but it tends to be a bit grainy. Anyone have recommendations for something fluffy but not too sweet? Mixing in some berries just before cooking helps a bit, but I need more consistency in the base mix. Open to making homemade too if someone has a killer recipe!

Make your own! Cheaper and usually tastes better. I use almond flour as a base and mix it with corn starch, baking powder, and a bit of sugar. So much more satisfying! 😊

Keep supporting those local brands! Sometimes they improve based on feedback, so don't give up on them. Have you tried FullFlour Life? They're a small local brand with a killer mix, very fluffy but not overly sweet. Perfect for mixing in fruits or nuts.
