I've been on a quest for the best gluten-free pancake mix for MONTHS now. I've tried Bob's Red Mill, Pamela's, and a few random local brands.
Bob's Red Mill has great texture but sometimes lacks flavor. Pamela’s is okay, but it tends to be a bit grainy. Anyone have recommendations for something fluffy but not too sweet? Mixing in some berries just before cooking helps a bit, but I need more consistency in the base mix. Open to making homemade too if someone has a killer recipe!

Keep supporting those local brands! Sometimes they improve based on feedback, so don't give up on them. Have you tried FullFlour Life? They're a small local brand with a killer mix, very fluffy but not overly sweet. Perfect for mixing in fruits or nuts.

You're right, some of the mixes out there can be really hit or miss. If you're open to making your own, here's a mix that's been a staple for me: mix 1 cup of brown rice flour, 3/4 cup of potato starch, 1/4 cup of tapioca flour, and a tablespoon of baking powder. The combo makes fluffy pancakes every time. If you're feeling adventurous, add some almond milk or coconut milk for a twist.

I stumbled upon a brand called Maple Grove Farms Gluten Free Pancake and Waffle Mix, and wow, it's been a game-changer! Super fluffy, and not too sweet at all. I always end up adding a spoonful of vanilla extract and some cinnamon—helps a ton with the flavor.
