Ingredients: - 1 lb fresh mushrooms, sliced - 1 medium onion, diced - 2 cloves garlic, minced - 1 red bell pepper, diced - 2 tomatoes, diced - 4 cups vegetable broth - 1 tsp smoked paprika - 1 tsp chili flakes - 2 tbsp olive oil - Salt & pepper to taste

Instructions: 1. In a large pot, heat olive oil over medium heat. Add onions, and garlic, cook until soft. 2. Throw in the bell pepper and mushrooms, cook until they start to brown. 3. Add tomatoes, vegetable broth, smoked paprika, and chili flakes. Bring to a boil. 4. Reduce heat to low, let it simmer for 25-30 mins. Add salt & pepper. 5. Serve hot, topped with grated parmesan and some fresh herbs.

idk why but I always pictured a Super Mushroom stew being red like a super mushroom, haha. For an extra power up, consider tossing a handful of spinach or kale in there, gives it that 1-Up color and ups the health factor!
