My Mom’s Meatloaf – A Classic!

Nothing beats mom's meatloaf, right? Mix 2 lbs ground beef, 1 finely chopped onion, 1 cup breadcrumbs, 2 eggs, a splash of milk, and a good squirt of ketchup. Season with salt, pepper, and a tsp of Worcestershire sauce. Shape into a loaf and bake at 375°F for about an hour. Simple, but oh-so comforting.

Meatloaf is just pure comfort food. I like to add a little mustard in my ketchup topping, gives it a bit of tang. And sometimes, making little individual loaves cuts down on the cooking time and everybody gets a nice crusty edge piece!

Tried this out and threw a twist on it, I wrapped it in bacon before baking. Adds an awesome smoky flavor that's just killer. And always remember to let it rest! Gotta keep those juices in.

I know this is a meat recipe, but any chance you've ever tried making it with lentils or some other meat alternative? Mom's recipes are the best, but I've been trying to cut down on meat recently.

That sounds like mam's alright but don't forget to let it rest for a bit when it comes out of the oven. Stops it from falling apart when you slice into it. Love a good meatloaf sandwhich the next day!

Pro tip here: Elevate your meatloaf by deglazing the pan with red wine and beef stock after removing the loaf. Reduce it down, and you'll have an amazing gravy to go alongside the meat. Also, consider a herb mixture with fresh parsley, thyme, and a bit of rosemary. It really brightens the flavors.

Looks delish but do you have a version that's low-carb? I've been doing keto and missing meatloaf like crazy. Maybe almond flour instead of breadcrumbs?

Yum, meatloaf! Always a hit at my house. Have you ever tried mixing in some ground pork with the beef? Adds a nice flavor. Oh, and a little smoked paprika goes a long way! Keep up the good cookin'!
