In Kirby & The Amazing Mirror, Meta Knight explains that Kirby's power comes from his ability to help others. This could link his copy ability to a kind of empathic mimicry, where he takes on the abilities of those he aims to protect/his adversaries. It's almost a physical manifestation of his desire to maintain peace. Definitely a magical aspect to it, considering the enemies he's defeated.

Kirby's physiology is unique due to his species' properties (which I believe is still a mystery in the lore?). It might be a mix of both biological adaptation and magic. His stomach dimension (yes, that's a thing) could house the knowledge and energy of creatures he inhales, which is then manifested physically. It's sorta like he downloads the abilities into himself.

So, in the games they often refer to 'Copy Essences' which suggests that these abilities are like the intrinsic spirit or essence of the beings or objects Kirby's copying.
