Organ donation systems can be one - if everyone agrees to donate (coop for stag), then the system works and saves lives. If not, well, you know, more scarcity (everyone settles for hare).

How about the tragedy of the commons? Like overfishing. Fishers gotta decide whether to overfish (hare) and get immediate payoff or restrain and sustain fish population (stag). It's a gamble on cooperation. If everyone overfishes, the resource is doomed.
