Sightseer and Headhunter can be done alone and pay well. Time Trials are also worth a shot if you're good at driving. They reset weekly and have solid payouts. You could also flip cars from the street to Los Santos Customs for some quick bucks. 👍

yo, glad ur diggin gta5! for cash w/o heists, hit up contact missions. Simeon, Gerald, and Martin missions can be soloed and they pay decent for starters. grind those and upgrade your arsenal, will make the shooting part easier in time.
