Here's a recipe that's been a hit in my house. Super simple!
Ingredients: - 2 cups cooked quinoa - Bunch of kale, torn into bite-sized pieces - 1 avocado, cubed - 1/4 cup chopped almonds - 1/4 cup dried cranberries - Salt and pepper to taste
Lemon-Tahini Dressing: - 1/4 cup tahini - Juice of 1 lemon - 2 tbsp olive oil - 2 tbsp water - 1 clove garlic, minced - Salt to taste
Just mix all salad ingredients, whisk the dressing together, and toss it up! Healthy and DELISH.
