Best dark chocolate bars? Looking to expand beyond 70% cacao

The title says it all - I've been stuck in the 70% cacao realm and wanna go darker. Looking for recommendations on quality dark chocolate bars that have complex flavors, aren't too bitter, and, ideally, fair trade. What are your favs?

I’ve been all about trying chocolates from different regions. Just picked up a Manjari 64% by Valrhona, but they have a Guanaja 70% which is seriously intense. Definitely on my list, might suit you as well!

You want something mind-blowing? Get your hands on Amedei's 'Porcelana'. It's 70%, but taste-wise, it's a whole different beast. Pure, not bitter, and crazy smooth.

Look into small-batch producers! Many of them have options that go well beyond 70%. Rogue Chocolatier’s Hispaniola at 80% is a craft chocolate ‘epiphany’—you won’t be sorry.

Fair trade is the way to go! Alter Eco's Blackout is 85% and it's delish plus fair trade and organic! I can indulge without feeling guilty about where it comes from.

A bar that never disappoints is the Lindt Excellence 90% Cocoa Supreme Dark. It's more widely available, and for a 90%, it's surprisingly not too bitter.

If you're looking to step up your dark chocolate game, you've gotta try Akesson's 85% Madagascar. It's like, super smooth despite the high cacao content and has this wild fruitiness that I didn't even think was possible in chocolate. Plus, they're big on the whole fair trade and ethical thing. Literally changed the way I see dark chocolate.
