Kangaroo on the Barbie

Mate, you've gotta try chucking some roo steaks on the barbie. Rub some olive oil, salt, and lemon myrtle on those bad boys, sear them quick so they're nice and juicy. Serve it up with some bush tomato relish and you’ve got yourself a feed fit for a king (or at least a bogan).

For a proper sear, make sure your grill's super hot before chucking the steaks on. And give the roo some time after grilling to rest. Juices redistribute, it's a game changer.

Honestly, you folks down under don't realize how special your native ingredients are! Bush tomato relish is iconic. Can't find half this stuff outside of Oz. Eat it up, you lucky ducks!

Love a good roo steak! But tbh, the trick is in the rush. Kangaroo is so lean it'll go dry in a second if you overcook it. Found that out the hard way, haha! Lemon myrtle for the win, though!
